I found this lovely slice recipe, I think in the CWA cookbook, (Old book). So I addapted it for a Gluten and Dairy free slice for our morning teas at our painting group. It went down well with all, no one could tell it was 'special' !
Honeymoon slice / Gluten free/Dairy free
Base;
3oz. Nutlex spread
1 cup SR Gluten free flour, (white wings)
½ cup soft brown sugar
1 egg
Topping;
2 eggs
½ cup walnuts and cherries. (Mixed)
½ cup brown sugar
1 tablespoon corn flour (Coles or white wings)
½ cup sultanas
½ teaspoon vanilla
1 cup coconut
Method Base;
Cream butter and sugar, add egg. Beat well & stir in flour.
Press over the base of a lined lamington tin with back of spoon.
Method Topping;
Mix coconut, cherries, walnuts, brown sugar, cornflour and sultanas together. Add lightly beaten eggs & vanilla. Combine well and spread over the base of the slice already in the tin. Bake in moderate oven (180c) about 30 minutes or until golden brown.
For slice not gluten free; omit the 1 cup x SR Gluten free flour, instead use; 1 cup Plain flour & ½ teaspoon baking powder. Omit the Nutlex and use butter or margarine.
